Food styling ice cream recipes for Yorkshire Life Magazine. It’s always a pleasure to be working with Nicky at the Bank Studio based in Newburn, Newcastle upon Tyne. Over the years Nicky and I have done lots of food styling projects together, but this was no ordinary food styling project. We were asked to come up with some ice cream recipes for Yorkshire Life Magazine using Brymor ice cream.
How we planned the project
Firstly, we came up with some recipe concepts using different Brymor ice cream flavours. We then narrowed the concepts down to three recipes for me to develop. I developed and tested the recipes at home then wrote up the final three. On a sunny Saturday morning we set about styling and photographing three delicious ice cream recipes.
The recipes
Styling ice cream can be tricky at the best of times but in the smouldering heat of July it was very tricky. We had to work quickly to get our shots before the ice cream melted. The recipes included a tropical ice cream cake incorporating delicious Brymor tropical mango and banana ice cream. I assembled the mini cakes with layers of sponge and ice cream then decorated them with fresh mango and toasted coconut.
Recipe two was a refreshing prosecco and raspberry ice cream float which had grown up flavours of mint and raspberry coulis. This is a perfect light dessert to enjoy in the summer sunshine. The most challenging ingredients for a food stylist are ice cream and chocolate and our mini honeycomb lolly pops did prove to be a problematic in the summer heat! We managed to freeze them down really well and got the shots before the ice cream had a change to melt and dip.
