Ingredients

Filling

  • 1 tbsp vegetable oil
  • 1 large carrot, peeled and finely diced
  • 1 medium onion, finely diced
  • 2 cloves garlic, crushed
  • 200g chestnut mushrooms, washed and quartered
  • 2 tsp ground cumin
  • 1 tbsp medium curry powder
  • 2 tbsp tomato purée
  • 1 × 400g can finely chopped tomatoes
  • 500ml vegetable stock (made with 1 stock cube)
  • Salt and freshly ground black pepper
  • 2 × 400g cans green or brown lentils, rinsed and drained
  • 1 tbsp cornflour mixed with 2 tbsp cold water

Topping

  • 1kg sweet potatoes, peeled and diced
  • 40g vegan spread

To Serve

  • Seasonal vegetables

Method

  1. Heat the oil in a large ovenproof casserole dish or frying pan. Add the carrot and onion, then cook gently for 8–10 minutes until softened.
  2. Stir in the garlic and mushrooms before cooking for a further 2–3 minutes.
  3. Add the cumin and curry powder, mixing well so the vegetables are evenly coated. Cook for another minute.
  4. Pour in the tomato purée, chopped tomatoes and vegetable stock. Season with salt and pepper, bring to the boil, then reduce the heat and simmer for 10 minutes until the vegetables are tender.
  5. While the filling cooks, boil the sweet potatoes for 10–12 minutes until soft. Drain well, return them to the pan and mash with the vegan spread until smooth. Season to taste.
  6. Stir the lentils and cornflour mixture into the filling, then simmer for a further 2–3 minutes until the sauce thickens.
  7. Preheat the grill to high.
  8. Spoon the sweet potato mash evenly over the filling and use a fork to create a textured surface.
  9. Grill for around 5 minutes, or until the topping is golden and the filling is bubbling.
  10. Serve immediately with your favourite seasonal vegetables.
